Onion-Garlic Free Aloo Recipes

Aloo is one of the most consumed vegetables worldwide. A little dirt-covered spud can be used to make numerous dishes that allure people of almost every age. Easily accessible and affordable potatoes are always stacked up in every household. This delicious and easy-to-prepare vegetable is so versatile that it can be baked, mashed, fried, roasted, boiled, or combined with any other vegetable and dal as well. It can go very well with Satvik food options when we avoid onions and garlic during festivals like Navaratri or other fasting days. Alur Dom

In Bengal, different varieties of Alur Dom are prepared, but this Alur Dom recipe is a very basic and authentic variety that contains no onion or garlic. This tasty dish is offered in bhog in any pooja and is served with khichuri, Luchi, Koraishutir Kochuri, or Radhabollobhi.

  • Baby Potatoes – ½ kg boiled and peeled
  • 2 Tomatoes pureed
  • Green Chilli – 3
  • Ginger – 1-inch piece grated
  • Bay Leaf – 1-2
  • Black peppercorns – 4
  • Green Cardamom – 2
  • 2 pieces of cinnamon
  • 3-4 Cloves
  • Cumin seeds – 1/2 Teaspoon
  • Jeera powder ½ teaspoon
  • Coriander Seeds – 1/4 Teaspoon
  • Coriander Powder – 2 Teaspoon
  • Turmeric powder – 1/2 Teaspoon
  • Kashmiri red chili powder 1 teaspoon
  • Red Chilli Powder – 1 Teaspoon
  • Salt – as per taste
  • Sugar as per taste
  • Green cardamom -3
  • Coriander Leaves – as required
  • Ghee 2 tsp
  • Oil

In a bowl, add grated ginger, coriander powder, jeera powder, 11/2 tablespoon red chili powder, 1 tsp Kashmiri red chili powder, and 1/4 cup water to form a paste. In a pan, heat some oil and add potatoes and 1/4 tsp of turmeric powder. Fry it well till they turn golden. Now, in another pan, heat some oil and add bay leaves, dried red chilies, cinnamon sticks, 3 cardamoms, cloves, jeera, and asafetida. Let it crackle. Now add turmeric powder and masala paste. Fry it well and then add tomato puree and cook well on low flame.  Fry till oil leaves the pan. Now add fried potatoes and salt as per taste. Mix it well. Be patient while frying the masala for at least 8-10 minutes. This will help bring the intense flavours of the masalas. A well-roasted masala will give this dish a very good flavor and texture. After 8 to 10 minutes, add water, mix it well and cook the curry with a lid on the pan on a medium flame for 5-6 minutes. Now, add garam masala powder, stir well and add ghee. Garnish it with freshly chopped coriander and switch off the flame. Your delicious dish is ready to be served.

Aloo Gobi recipe

Aloo gobi is another popular and easy to make and flavourful dish. The combination is super comforting and yummy. You can fry chopped potatoes in traditional Indian tadaka and add turmeric powder, red chilli powder, salt, garam masala, and coriander-cumin powder. Now add blanched gobi in it and saute it well. Garnish with coriander leaves and serve the dry aloo Gobi with Rotis/parathas. You can also cook cauliflower and potatoes in tomato-based curry and then add water to adjust consistency and serve a textured Aloo Gobi with gravy.

With just a few easily available ingredients, you can make tasty aloo dishes without onion and garlic that can be served with roti, paratha, naan, and even rice.
